Preheat your oven to 400°F (200°C). Place the whole bell peppers and tomatoes on a baking sheet lined with parchment paper.

Roast the vegetables in the preheated oven for about 30-35 minutes, or until the skins are charred and blistered. Turn them occasionally to ensure even roasting.

Once roasted, remove the baking sheet from the oven, and immediately transfer the bell peppers to a heatproof bowl. Cover the bowl with plastic wrap, or place them in a sealed plastic bag to steam for 10 minutes. This will help to loosen the skins, making them easier to peel.

While the peppers are steaming, peel the skin off the roasted tomatoes and discard it. Chop the tomatoes into small pieces and set them aside.

Peel the skins off the roasted bell peppers, remove the seeds and membranes, and dice them into small pieces.

In a skillet or frying pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.

Stir in the diced roasted peppers and chopped tomatoes. Season with ground cumin, paprika, salt, and black pepper. Mix well to combine all the flavors.

Cook the mixture over medium heat for another 5-7 minutes, allowing the flavors to meld together. Adjust the seasoning to your taste.

Remove the Taktouka from the heat and let it cool slightly. You can serve it warm or at room temperature.

Garnish with fresh cilantro or parsley for added freshness and color, if desired.

Enjoy the Taktouka as a delightful salad, a tasty side dish, or a scrumptious topping for your favorite bread. Savor the symphony of flavors that is quintessentially Moroccan, bringing the magic of North Africa to your plate! Bon appétit!
